What bases do we bake? We have 3 types of sponge cakes, Genoese, Madeira & No Added Egg. These all come in Vanilla, Chocolate or Lemon. (Other flavours available on request, if time permits). They can also be supplied as CUPCAKES. We also bake Carrot cake &  Best Fruit cake. The shapes available are Square, Round, Hexagon, Oval, Petal & Heart.

What are the differences between the sponges? We have been baking our Madeira cake from a traditional scratch recipe since the mid 1960’s. It is what we use for our celebration cakes in our shop. The Genoese range is a ‘pre-mix’,developed over many years by one of the biggest manufacturers of cake mixes. The Genoese is generally a softer, moister cake than the Madeira & usually bakes a little deeper. The Madeira cake is usually preferred by those who are sculpting a cake. The Madeira has a shelf life of 4-6 weeks from baking, the Genoese is nearer to 3-4 weeks,
